Apple Spice Cake

Apple Spice Cake

Secrets to excellent apple cake are to not over-bake; use tart, crisp, flavorful apples chopped no larger than 1/2 square; and use real, salted butter.

1 cup brown sugar
1 cup white sugar
3 cups peeled, chopped apples 
2 eggs
1/2 cup butter
1/2 tsp salt
2 cups flour
2 tsp soda dissolved in 1/2 cup cold water
1 tsp cinnamon
1 tsp nutmet
1/2 tsp cloves
1/2 cup chopped walnuts

Cream sugar, butter, eggs.  Add sifted-together dry ingredients, then stir in water and soda.
Fold in apples and nuts.  
Bake at 350 (40-60 minutes depending on pan size)  Done when knife comes out clean or cake pulls slightly from sides of pan.



Caramel Sauce

1/4 cup butter
1/4 cup granulated sugar
1/4 cup brown sugar
1/4 cup cream or milk
1 tsp vanilla

Cook, stirring, until thick.  Serve warm over pieces of apple cake.
